Cryptomatte pick: keep a hover probe, built off the UI thread (#473)

Cryptomatte pick: keep a hover probe, built off the UI thread (#473) ## What `effect.cryptomatteAt` (#1841) renders the effect's input on every call to find its pixel grid. A hover can't afford that: on a 3D precomp every call takes about 0.5 s. This PR keeps what a pick needs (a "probe"), so a hover is a few array reads. It also gives the viewer (2b) a way to build the probe without blocking, makes sure the probe never outlives its use, keeps the probe across undo/redo over picks, and labels a pick's undo step **Pick Cryptomatte**. Part of #473. First of four stacked PRs (`2a` -> `2b` -> `2b-highlight` -> `2c`) on `main` (`01c904b0`). ## How - `CryptoProbe
