Docs: refresh headline numbers and correct field-format follow-ups against Word
Docs: refresh headline numbers and correct field-format follow-ups against Word Docs only. Brings the headline numbers and the #4232 follow-ups in `docs/gaps.md` in line with what has shipped and with real Word. **Headline numbers** (`ROADMAP.md`, `docs/target-app-parity.md`, `docs/roadmap.md`) - Catalog coverage 505 / 520 (97.1%) and 648 commands: measured today with `wordcraft-cli parity` and `wordcraft-cli commands` built from `main` 4b8b06fe. The checked-in `docs/parity-checklist.md` already says 505 / 520. - Release v0.11.0 (2026-10-25), with the asset list from the release page. - Tests and code: 4,611 `#[test]` functions, 23 `proptest!` blocks, ~330,000 lines of R
